Super Nachos

INGREDIENTS

2 bags tortilla chips
For the salsa:
4 tomatoes, seeded and chopped
1 jalapeno pepper, seeded, veined and minced
1 onion, chopped
¼ cup cilantro, finely chopped
2 teaspoons kosher salt
For the topping:
1 tablespoon olive oil
1-pound ground beef
3 cloves garlic, minced
1 onion, chopped
1 jalapeno pepper, seeded, veined and finely chopped
2 teaspoons kosher salt
1 tablespoon chili powder
1 ½ teaspoons tobacco (or more if you like)
1 15-ounce can black beans, drained and rinsed

For the cheese sauce:

2 tablespoons butter
3 tablespoons flour
2 cups milk
1 cup pepper jack cheese, shredded
1 ½ cups cheddar cheese, shredded
Optional Toppings: Sour cream, green onions, black olives, diced avocados

DIRECTIONS

Place tortilla chips on a large platter – the biggest you have, or use a
baking sheet.
In a medium bowl, combine salsa ingredients. Set aside.
In a large skillet over medium heat, cook ground beef, stirring to
crumble, until cooked through. Drain excess grease. Add garlic, onion
and peppers to the beef and sauté about five minutes. Season with
salt, chili powder and tobacco. Stir in beans and reduce heat to low.
In a saucepan over medium heat, melt butter. Whisk flour in and cook
for about 2 minutes. Slowly whisk in milk, bring up to a simmer, and
stir in cheeses.
Spoon meat mixture over the tortilla chips, and pour cheese sauce
over the top of the meat. Top with the salsa and any additional
toppings and serve immediately.
